Bottling Hotsauce and Basic Recipe
Sterilize Bottles by:
- boil them for 10-15 minutes
- put in oven at 250f till ready to bottle
- when bottling fill while hot, cap, turn upside down so heat from sauce sterilizes cap
- get a pH tester, read on proper pH at some point?
Hot Sauce:
4 yellow bell peppers
6 ghost
6 habanero
1 onion
5 cloves garlic
1 cup water
1 carrot
1 1/2 tsp salt
1 3/4th cup vinegar
1/4th tsp lemon
2tbsp sugar
1tbsp honey
chop/puree/blend
boil 20-25 minutes
put honey in last 5 minutes
this recipe fills about 2 1 pint mason jars, not sure how many bottles yet/ozes
i did this straight habaneros since i didn't have any ghosts, was a little too sweet for my taste, but still good overall, will try again with ghosts and if it's still sweet adjust sugar elements from there
