Ingredients
1/4th cup olive oil
Italian Sausage (typically 5 links in a pack)
20oz spaghetti sauce, marinara, whatever you like
1 onion
1 bell pepper
1 ball of fresh mozarella
salt
pepper
dry italian herbs
works best with cast iron, but can use a baking dish if necessary
Steps
1) preheat oven to 375f
2) heat olive oil up in skillet and start cooking italian sausage, 4 minutes each side, get nice and blackened/charred
3) start simmering sauce to heat it up, you just want it to not be cold
4) while cooking italian sausage slice onions and peppers roughly, no need for fine chopping, also slice mozzarella ball into a few thick slices
5) after italian sausage is finished pull links out and start sauteeing onions and bell peppers in the olive oil and fat from the sausage, do this for 10-13 minutes, get them nice and brown/caramelized
6) Assembly: when onions/bell peppers are ready pour a bed of them at bottom of cast iron or baking dish, then place italian sausage on top of them, fill the remaining spaces with the rest of the bell peppers/onions, pour sauce around filling up the rest of your vessel, top with the slices of mozzarella and put in the oven
7) cook for 20 minutes, then turn on broil to high, move to top rack and broil cheese till nicely golden/black for another 3-4 minutes
