Salt to taste
1 lb of spaghetti or tonnarelli
2 cups of romano or 1 cup romano 1 cup real parmesan (both are fun in their own different ways)
couple tablespoons of fresh ground pepper, i like mine coarse
boil pasta according to instructions
while boiling combine 1.5cups of the cheese pepper and a couple tablespoons of hot pasta water to start melting the cheese in a mixing bowl and form a rough paste (not a sauce)
strain pasta, keep the cooking water boiling, mix the pasta in the mixing bowl with the cheese paste and then slowly combine additional tablespoons of boiling water and mix till you develop a smooth creamy not runny sauce
plate and sprinkle servings with remaining cheese and pepper
