I par boiled beef bones pork neck bones and beef shank, then rinsed the shit off and put back in cooker n covered with water. Add 4 lemon grass stalks, table spoon of shrimp paste diluted in one cup of hot water and let it settle and pour liquid only into pot, 5-6 star anise, rock sugar, 3-4 tbs of fish sauce, few good slices of ginger and bbh seasoning. Comes in a packet from asian grocery. Cook for 45-1 hr and release steam. Taste n add more bbh seasoning or fish sauce.
Make a sate with fine chopped garlic, shallots and lemon grass and oil. This you will add to the soup after pressure cooking. Then you can simmer how ever long u want after that
