1 part starter
2 parts water
3 parts flour
2g salt per 100g of flour
Mix first three parts
Let sit for about 30 minutes
Add salt with a splash of water
You don't have to knead it but you can by slapping it on the counter, pulling it to you, rolling it forward (10 minutes)
Proof for 4 hours (proof means rise, prove yeast works)
After 4 hours form into ball and push it to make it real tight
Proof it overnight in the fridge upside down for 12 hours
Take out two hours before cooking
Preheat oven and dutch oven at 480f
Place dough in dutch oven, score, spray the inside of dutch oven with water
Cook at 430 for 25 minutes with lid on
Cook another 25 minutes with lid off
Rest for 1 hour
