1T Sriracha
1T olive oil
1/4 cup rice wine vinegar
1/4 cup soy sauce
block of silken tofu
2-3 medium sized mushrooms (I hear chinese wood ears are best, but egh, never usually have them..)
green onion (option, to your liking)
2 eggs
2T corn starch
1 quart of stock (I use veggie, you can use chicken)
salt (add to your liking)
pepper (add to your liking)
pinch of sugar
1-2inch piece of ginger
cut tofu into long rectangles (or however you like). Mine are usually 1/2" strips of tofu
slice mushrooms to your liking, my girlfriend doesn't like mushroom texture too much so I THINLY slice these for her, gets the flavor leaves less texture
chop green onion up
peel and grate ginger, easier to grate if it is frozen
you should be able to do this all in one medium sized pot
Heat pot up to medium high heat with olive oil. After your pot is heated add the ginger, mushrooms and sriracha. Crack a little salt over these ingredients to get them to sweat their flavor out. Do this for about 1-2 minutes.
Next add soy sauce, rice wine vinegar, and your veggie or chicken stock. Bring contents to a boil and then lower heat to a simmer for at least 10 minutes. Also add in sugar, salt and pepper to your liking.
After simmering for at least 10 minutes, add your silken tofu. At this time beat together 2 eggs and start spinning the soup with a fork or whisk (I find a fork is actually a little easier for this part). Slowly pour in the beaten egg, it should develop feathery look. At this time you should let the egg sit in for at least another minute to finish cooking. Whisk in the cornstarch to thicken soup up and serve.
Serve with fresh green onions on the top of the soup for garnish.
My favorite part of this soup is when you sweat the sriracha, ginger and mushrooms in the pot are sweating together. This has to be quite possibly the strongest smell my nose has ever sat directly over and it is a great smell that fills up your house quickly. One thing to note is this might make someone who is sensitive to spicy foods tear up or not be able to be inside or near the kitchen.
